At home — 6 complete meals

Cheap and fast, and each one complete on its own — a grain with a legume, or soy, which needs no partner. The cheapest is about a dollar a serving.

Rice & beansgrain + legume

1 cup cooked brown rice · 1 cup black beans, rinsed · ½ onion · 2 cloves garlic · 1 tsp cumin · juice of 1 lime · salt · cilantro

Sauté onion and garlic till soft, add beans, cumin, and a splash of water; simmer 5 minutes. Fold into the rice, finish with lime and cilantro. ~15g protein, about a dollar a serving.

Chickpea smash on toastlegume + grain + seed

1 can chickpeas · 2 tbsp tahini · juice of ½ lemon · salt · whole-grain bread

Fork-smash the chickpeas with tahini, lemon, and salt. Pile onto toast. Complete three ways over, in about five minutes.

Peanut noodlesgrain + legume

noodles · 2 tbsp peanut butter · 1 tbsp soy sauce · juice of ½ lime · hot water · anything green

Cook the noodles. Whisk peanut butter, soy sauce, lime, and a little hot water into a sauce; toss. Top with whatever green you have. Five minutes.

The everything bowlgrain + legume

microwave-pouch rice · 1 can black beans · frozen corn · salsa · hot sauce

Heat the rice, beans, and corn; pile in a bowl with salsa and hot sauce. The complete bowl, lazy mode — no cooking skill required.

Tofu scramblesoy — already complete

1 block firm tofu · ½ tsp turmeric · 2 tbsp nutritional yeast · salt · any vegetables

Crumble the tofu into a hot pan. Add turmeric for colour, nutritional yeast for a cheesy savour, salt, and any veg. Six minutes. Breakfast or dinner.

Lentil-tomato stewlegume — batch it

1 cup red lentils · 1 can tomato · 1 stock cube · 1 tsp cumin

Simmer everything together for 10 minutes. Makes four servings — tomorrow's lunch is already done. (Pair with bread or rice to round out the amino acids.)
