what it is

Vegan fast food. Fast because most people eat on the way to something else, and a principle that only works when you have an hour and a table is not a principle, it is a hobby.

The name is not decoration. This comes out of the same studio as everything else on this site, and it is the same claim carried into the one place a person meets it three times a day.

why

Ahimsa — non-harm. It is the first principle phronesis is built from, and a vegan world is what actualising it looks like. Everything else here is downstream of that.

It is argued rather than announced. The derivation is written out — premises named, the exact place it cannot cross an is into an ought marked rather than smuggled, three limits where it stops holding, and four ways to break it. If the argument fails you should be able to say which line failed.

The leaves that go on the plate can be grown a few metres from it. Controlled-environment growing runs the leafy greens a fast-food kitchen uses most — lettuce, herbs, microgreens — on shelves, in water, under light, with no field and no season.

And it is where the same envelope the studio keeps finding turns up in its native form. A living leaf is a wet surface losing water, so the variable that governs it is exactly vapor pressure deficit— the leaf’s own question, the one the knot already reads. Here VPD is not borrowed and not a metaphor. It is simply the right quantity.

the field and the fridge

The envelope fails at both edges, and the two edges are two different plants’ worth of trouble. Growing greens want VPD around 0.8–1.2 kPa — a little dryness, so the leaf keeps drawing water and calcium up to its tips. Push VPD too low, saturate the air, and the plant stops pulling: tip burn, weak leaves, calcium starved at the edges. Push it too high and the plant dries and stalls.

Cut greens want the opposite. Once harvested a leaf is still respiring and still losing water, but no longer replacing it, so the shelf wants near-saturation — VPD near zero, 95–100% humidity, cold — to stop the wilt. Too warm and wet, though, and the same moisture that keeps it crisp feeds the rot.

So the same leaf wants dry air alive and saturated air cut, which is the whole reason a field and a fridge are two rooms and not one. The Field and the Fridge works it through: the setpoint flips because the knife cuts the root, and the root was the leaf’s return path — the same water loss, free while it is replaced and a debt once it is not. Not a plant against a machine this time, but a plant against its own harvested self.

what this is not

Nothing is open. There is no kitchen, no menu, no location, and no date — and where there is no date, this page will not invent one.

What exists is the identity and the intention, which is exactly as much as this page claims. Every other page on this site says where it stops; a page about a business that has not opened does not get an exemption from that, and a launch page implying a shop you could walk into would be the one thing the studio tells everyone else never to do.
